Avocado Chicken Salad
A simply delicious salad combining chicken, avocado and celery with only lemon juice to dress it.
Ingredients
2 ripe avocados
2 cups chicken, cooked, cooled and diced
2 hard-boiled eggs, peeled and sliced
2 tablespoons sweet red peppers, diced
1 cup celery, finely chopped
1 small onion
1/4 teaspoon tarragon
Salt and pepper to taste
3 tablespoons lemon juice
Romaine leaves
Cherry tomatoes
Cucumber slices
Instructions
Combine the avocado, chicken, eggs, peppers, celery, onion and spices and toss with the lemon juice. Serve on a bed of romaine surrounded with cherry tomatoes and slices of cucumber
