Avocado Soup with Lime
A cold avocado soup with lime, curry and cream.
Ingredients
2-3 ripe avocados
2-3 tomatoes
2 cloves garlic
1 lime
1 cup heavy cream
4 cups chicken broth
8 drops Tabasco sauce
Pinch of curry powder
Salt and white pepper to taste
Instructions
Grate finely the skin of the lime and set it aside. Juice the lime. Remove the skin and seed from avocado and put in a large bowl or blender. (You can use an immersion blender.) In bowl add garlic, lime juice, puree this mixture. Add the chicken broth, cream, Tabasco and curry and puree again until smooth. Add salt and pepper and put in the refrigerator.
Garnish:
Peel the tomatoes, deseed and cut into small cubes. (Always use some tomatoes and grated lime).
Optional garnishes:
Broken salted peanuts, 8 slices of bacon cooked and crumbled, chives, baby shrimp, green onions sliced very thin.
Served in chilled glass bowls.
