Another of Molly's catering favorites. Fresh roast turkey is the best.

California Hero

Turkey, mushrooms, bean sprouts and 1000 Island Dressing are what give this sandwich its flair.

Ingredients

12 slices dark pumpernickel bread

1 head of lettuce

3 cups bean spouts

1 pint mushrooms, sliced

12 slices turkey breast

2 tomatoes, sliced

3 tablespoons chives, chopped

3 eggs, hard boiled

8 ounces 1000 Island dressing

Instructions

1. Spread bread with butter. Place 1 lettuce leave on each slice of bread.

2. Mix bean sprouts, mushrooms, salt and pepper. Sprinkle about 1/3 cup of the mixture over the bread.

3. Top with turkey slices. Sprinkle another 1/3 cup of bean sprout mixture on each sandwich. Sprinkle chives over sprouts. Top sandwiches with sliced tomatoes and hard-boiled eggs.

4. Pour about 2 tablespoons 1000 Island Dressing over each sandwich.
