You need to grind this salsa with a Mexican mortar and pestle, called a molcajete.

We enjoyed having it prepared for us at our table at Carlos & Charlie's in Cabo San Lucas.

They brought the roasted onion, serranos and tomato and ground it up on the spot.

Carlos & Charlie's Fresh Salsa

This freshly roasted salsa is great with tortilla chips.

Ingredients

2 cloves of chopped garlic
2 tablespoons roasted onion
2 roasted Serrano
1 roasted and peeled tomato
1 teaspoon olive oil
pepper
salt, plenty
1 teaspoon chopped cilantro
olive oil

Instructions

Rub the molcajete with olive oil and wipe away the excess with a cloth.
Grind a clove (or more to taste) of chopped garlic.
Grind in approximately 2 tablespoons of roasted onions.
Then grind in 2 (or more to taste) roasted Serrano chilies.
Then grind in a roasted peeled tomato.
Sprinkle with a teaspoon of olive oil.
Add pepper and plenty of salt and
1 teaspoon of chopped cilantro.
