This is one of our favorite Mexican dishes. Use a good quality chorizo sausage. Not the stuff wrapped in plastic.

Serve with refritos and rice.

Chicken in Chorizo Sauce

Chicken in a spicy sauce flavored with chorizo sausage, garlic and tomato.

Ingredients

1 chicken (about 2 1/2 pounds)

1 cup chicken stock

1 onion, chopped

3 garlic cloves, minced

2 parsley sprigs

1 bay leaf

1/4 teaspoon thyme

1/4 teaspoon marjoram

1/4 teaspoon salt1/2 teaspoon pepper

1 pound tomatoes, drained & peeled

2 red chili peppers

2 chorizo sausages

2 green chilies (canned)

Instructions

Remove the skin from the chorizo sausages and chop up the meat. Fry until just cooked. Pour off grease.

Cut up the chicken and place in a large stew pot. Add the chicken stock, onion, garlic, parsley, bay leaf, thyme, marjoram, salt, black pepper, and red peppers. Bring to a boil and add the chorizo meat.

Simmer 30 minutes. Remove the chicken and red peppers and set aside. Strain the solids from the broth and blend with some of the stock and the green chilies. Return to the pot.

Simmer the sauce until it becomes thick like heavy cream. Add the chicken for about 10 minutes.
