Chinese Chicken Salad
A chicken salad with hoisin sauce and peanuts served on a bed of fried rice stick noodles and romaine lettuce.
Ingredients
2 whole chicken breasts
2 tablespoons hoisin sauce
1 teaspoon Oriental sesame oil
1/2 cup chopped, fried peanuts (fry until very light golden)
2 scallions, finely chopped
2 tablespoon toasted sesame seeds
1/4 LB pei mei fun (rice stick noodles) (deep fry quickly in oil)
Romaine lettuce
Watercress
Cilantro
Lemon wedges
Instructions
1. Boil the chicken breasts for 15 minutes. Cool and shred. Combine with hoisin sauce, sesame oil, peanuts, scallions, and sesame seeds.
2. Fry the rice stick noodles in batches very quickly in hot oil in a wok (test a few rice sticks noodles first to make sure the oil is hot. They should puff instantly).
3. Shred the romaine and toss with the watercress. Place on a large platter. Top with the rice stick noodles then top with the chicken mixture. Garnish with lemon wedges and chopped cilantro.
