Coleslaw with a Mexican flavor.

Cilantro Coleslaw

Coleslaw with cilantro, lime and garlic.

Ingredients

1 small head of cabbage, finely shredded

1-2 tablespoons minced cilantro

1small onion

1 European style cucumber

1/3 cup lime juice

1/2 cup salad oil

2 cloves garlic, pressed

Salt and pepper

Instructions

Mix the cabbage and onion. Add cilantro to taste. Peel and seed the cucumber and cut it into 3-inch long sticks. Make the salad dressing my combining the oil, limejuice, garlic and salt and pepper. Stir dressing into cabbage mixture.
