This is a perfect accompaniment to the Pork Loin Braised in Milk.

Delicious sweetly carmelized onions.

Ingredients

3 pounds small white onions
8 tablespoons butter
1/3 cup plus 1 tablespoon sugar
1 cup white wine vinegar
salt and pepper
1 1/3 cup broth

Instructions

Peel the outer skins of the onions, taking care not to remove the root base. Put all of the ingredients except the broth into a large skillet. Cover and cook on low heat for 30 minutes. Add 1/3 cup of the broth and cook for 15 minutes. Add 1 cup of the broth and cook for 30 minutes more, shaking the pan occasionally. Uncover and cook until sauce has thickened and reduced.
