Citrus Chicken Breasts

A delicate spiral of ham rolled in a chicken breast and served on an orange slice.

Ingredients

3 boned chicken breasts, halved, skinned and slightly flattened

1/4 cup melted butter

1 tablespoon triple sec or other orange liqueur

6 slices Danish ham

Flour2 slightly beaten eggs

2/3 cup fine dry seasoned breadcrumbs

1 stick butter, cut into bits

2 cups fresh orange juice

1 tablespoon tarragon1 teaspoon grated orange peel

1/2 teaspoon salt

6 -1/2 inch thick orange slices

Grated orange peel

Minced parsley

Instructions

Preheat oven to 400 degrees.

Place the slightly flattened chicken breast halves on a flat surface, smooth side down. Brush with melted butter mixed with liqueur. Place a slice of ham on each breast and roll up, securing with a toothpick. Roll in flour. Shake off excess. Dip in beaten egg, and then roll in breadcrumbs. Arrange in a buttered shallow baking pan. Dot with butter bits. Bake for 15 minutes, turning once.

Mix together orange juice, tarragon, orange peel and salt. Pour over chicken. Reduce over temperature to 350 degrees. Cover and bake 35 minutes longer, turning and basting occasionally. Remove toothpicks. Place on an orange slice and spoon sauce over chicken. Garnish with orange peel and some finely minced parsley.
