Cucumber, Tomato and Onion Salad
A Greek style salad of tomatoes, cucumbers and onions served with a dollop of yogurt.
Ingredients
2 large tomatoes, sliced
1/4-inch thick
2 small cucumbers, thinly sliced on the diagonal
1/2 sweet red onion, sliced into paper-thin rings
1/4 cup Greek olive oil
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 cup plain yogurt
Instructions
Alternate tomatoes and cucumber slices on a serving platter. Arrange onion rings over the top. Sprinkle with oil, salt and pepper. Cover and let stand at room temperature about 2 hours.
Dollop with yogurt just before serving.
