Serve this when figs and arugula are in season. You can substitute garden lettuces for arugula if it is not available.

Fig and Arugula Salad

Figs, arugula and goat cheese salad.

Ingredients

6 perfectly ripe figs (the purple one with white seams)

2 large handfuls of rocket (arugula) or garden lettuces, such as red oak leaf

2 ounces mild feta or creamy goat cheese cut in cubes

Freshly ground pepper

1 shallot, finely diced

1 tablespoon balsamic vinegar

Salt

2 or 3 tablespoon extra-virgin olive oil

Instructions

Quarter the figs or slice them into rounds. Wash and dry the rocket or lettuce leaves. Make the vinaigrette and toss the greens with enough vinaigrette to coat them lightly. Arrange them loosely on 2 plates, lay the figs among them with the sliced or crumbled cheese and spoon the remaining sauce on top. Dust with pepper. To make the vinaigrette: combine the shallot, vinegar and a pinch of salt in a bowl, then whisk in the olive oil. Taste and adjust the seasonings, if necessary.
