Fried Chicken

This is the ultimate fried chicken recipe that gives a flavorful, crispy crust on the outside but moist on the inside.

Ingredients

1 cup flour

Chili powder

Cayenne

Paprika

Onion salt

Garlic powder

Pepper

Salt

Curry powder

Peanut oil for frying

1 frying chicken, cut up

Instructions

1. Place the flour and generous shakes of the above spices in a paper bag. (Any of these spices may be omitted if you don't have it in the cupboard; however, paprika and some cayenne are essential.) Add the cut up chicken pieces and shake to coat with the flour spice mixture.

2. Pour at least 1 inch of oil in a cast iron pot. Heat on high just until it starts smoking. Throw in the chicken, turn the heat down to medium high and cook on that side for about 8 minutes. Turn the chicken and cook for about 8 minutes more. Oil should bubble up over the chicken and remain hot throughout. Do not cover with a lid. If you have an instant-read thermometer to check the chicken it should measure 160-170 in the thigh or breast. Drain on paper towels.

To make gravy:

Pour 1/4 cup of the grease used to cook the chicken into a pan. Place 1/4 cup of flour into a two-cup measure and gradually add two cups of water stirring the flour so it doesn't clump. You can use the water from the mashed potatoes. Heat the 1/4 cup of oil and gradually add some of the flour/water mixture. Let brown before gradually adding the rest of the flour mixture. Taste and season if needed.
