This version isn't as garlicky as some Gazpacho recipes. Please feel free to add garlic however.

Gazpacho of Seville

A zesty cold tomato soup perfect for a hot summer day.

Ingredients

4 cups regular strength chicken broth, chilled

4 medium-size tomatoes, chopped

1/2 teaspoon seasoned pepper

2 tablespoon olive oil or salad oil

6 to 8 tablespoon fresh limejuice

Salt to taste

1 small red onion, finely chopped

1 or 2 green peppers, finely chopped

1 or 2 stalks celery, finely chopped

Lime slices and watercress sprigs for garnish

Instructions

1. Remove any fat from the broth and discard. Mix the broth with tomatoes (including juices), pepper, oil, limejuice (taste for tartness desired) and salt. Chill thoroughly.

2. Serve, ladling into dishes and offering individual containers of onion, green pepper and celery so people can add what they wish. Garnish bowls with lime and watercress.
