For a soup with such simple ingredients, this ragout has an elegant flavor.

Serve with white wine and fresh French bread and butter.

You can substitute sea bass or shark but halibut is the best.

Halibut Ragout

Chunks of fresh halibut in a simple vegetable soup. This is a simple but delicious soup that is hearty and satisfying.

Ingredients

1 onion

1 garlic clove, minced

1 green or red bell pepper

3 stalks of celery, sliced

3 carrots, sliced

2 teaspoon oil

2 1-pound cans of tomatoes

1 cup chicken broth

1/2 teaspoon salt

1 teaspoon pepper

1/4 teaspoon thyme

1/4 teaspoon basil

3 teaspoon parsley, minced

2 pounds halibut

Instructions

Sauté the onion, garlic, bell pepper, celery, and carrots in the oil. Add the tomatoes, chicken broth, spices and parsley and simmer 20 minutes.

Cut the halibut into 1 1/2" cubes. Add to the soup and simmer 5-10 minutes or just until the fish is done.
