This is delicious and a big hit at parties.

Mushrooms Stuffed with Walnuts and Cheese

Mushrooms stuffed with spinach, cheeses and walnuts and broiled to perfection.

Ingredients

24 mushroom caps

1 large lemon

1 teaspoon olive oil

1 teaspoon butter

1 medium onion

3 tablespoons walnuts, chopped

2 green onions

7 ounces fresh spinach

1 1/2 ounces feta cheese, crumbled

1 ounce Gruyere cheese

2 tablespoons fresh dill

Salt and pepper

1 tablespoon oil

Instructions

1. Heat oil and butter. Add onions and cook till soft. Increase heat to medium high. Stir in walnuts and cook 30 seconds. Add green onions and garlic and cook another 30 seconds.

2. Add spinach and cook briefly until moisture evaporates. Let cool. Stir in cheeses, dill, salt and pepper.

3. Stuff mixture into mushroom caps and broil 8 to 10 minutes.
