Important note: This amount makes enough for a large cocktail party so I always half it. I keep a batch of these in the freezer and cook them as needed.

Olive Cookies (Sablés aux Olives)

The perfect cocktail appetizer. Delicious warm.

Ingredients

430 grams of parmesan or Comté chopped, I’ve always used Comté
300 grams of butter softened
360 grams of flour
10 grams of olive oil
200 grams of black olives pitted and chopped

Instructions

The recipe says to mix all ingredients in a mixer to the texture of dough but I find the cookies are prettier if you add the chopped olives after you’ve mixed the rest then just a couple of quick pulses in the mixer. Roll the dough into rolls the size of a thick cigar, refrigerate for 2 to 3 hours. Cut in slices of ½ cm. Put them on a cookie sheet that has been lined with baking paper. Cook in the oven 180°C/375°F for 10 or 12 or until just brown.
