A delicious light vegetarian appetizer.

Parmesan Spinach Balls

Spinach balls made with onion and Parmesan cheese.

Ingredients

2 packages frozen chopped spinach

2 large onions, chopped

2-3 cloves garlic, minced

3/4 cups butter

2 cups cornbread stuffing (if the mix comes with a seasoning mix - do not put the seasoning mix in this recipe)

5 eggs

1/2 cup Parmesan cheese

Instructions

1. Cook and drain the spinach. Sauté onions and garlic in butter until the onions are transparent. Add the onion mixture to the stuffing mix, and then combine with the eggs, spinach and cheese.

2. Roll into walnut sized balls. At this point they can be frozen. Freeze on cookie sheets until hard, and then layer in a Tupperware container. Keep frozen until time to bake them.

3. Bake at 400 degrees for 15-20 minutes. The bottoms should be golden brown.
