This is a perfect roast duck recipe. The secret of success is to slow cook the duck at 300 degrees so that the fat melts away leaving behind a crispy skin over the duck meat. The honey baste and plum sauce make this really succulent.

Roast Duck with Plum Sauce

Honey basted roast duck stuffed with prunes and apples with a plum sauce finish.

Ingredients

1 duck

Prunes

Apples

Honey

Vegetable oil

Salt

Pepper

Chinese plum sauce

Instructions

Stuff the duck with prunes and apples. Salt and pepper and place on rack in roasting pan. Put in 300 degree over about 3 1/2 to 4 hours or until all of the fat has cooked off. Baste with honey and oil mixture about every 1/2 hour.

Remove from oven and cut in half and place on a broiler pan.

Baste with plum sauce and broil till the skin is crispy. Watch carefully and be very careful not to burn it.

Allow a half a duck per person.
