Shrimp and Avocado Salad Filling

Shrimp and avocado combine to make a great filling for pitas, sour dough bread or your favorite roll or croissant.

Ingredients

8 ounces cooked shrimp

1 cup avocado, chopped

2 eggs, hard boiled

1/2 cup mayonnaise

1/4 cup scallions

2 tablespoons lemon juice

1/4 teaspoon tarragon

salt and pepper, to taste

Tabasco sauce, to taste

Instructions

Combine all the ingredients in a bowl and toss gently but thoroughly. Taste and adjust the seasoning. Cover and refrigerate until served.
