Spicy Chicken and Yogurt Pita Sandwiches

Spicy and refreshing chicken salad stuffed in a pita bread makes a great sandwich.

Ingredients

1 cup plain yogurt 3 tablespoons minced scallion

2 tablespoons minced fresh coriander leaves

1 tablespoon lemon juice

1 teaspoon toasted cumin powder

1 teaspoon salt, or to taste

2 cups cubed cooked chicken

1 tomato, peeled, seeded, and chopped

1 cup peeled, seeded, and diced cucumber

2-inch fresh green hot chili pepper,seeded and minced, if desired

Instructions

Let 1 cup plain yogurt drain in a sieve lined with a double thickness of cheesecloth set over a bowl for 1 hour. In a ceramic or glass bowl mix the yogurt, 3 tablespoons minced scallion, 2 tablespoons minced fresh coriander

leaves, 1 tablespoon lemon juice, 1 teaspoon toasted cumin powder, and 1 teaspoon salt, or to taste, and add 2 cups cubed cooked chicken, 1 tomato, peeled, seeded, and chopped, and 1 cup peeled, seeded, and diced cucumber. If desired, add a 2-inch fresh green hot chili pepper, seeded and minced. Mix well and chill, covered, for 1 hour. Spoon the filling into small pita loaves.

Garnish with shredded lettuce.
