The perfect ending for an Italian dinner.

We got this recipe from Biba's one night when the tiramisu wasn't ready yet. We were so disappointed that they gave us the recipe to appease us.

Tiramisu

A perfect tiramisu with mascarpone, cocoa, espresso and ladyfingers.

Ingredients

6 egg yolks

1/3 cup sugar

1 LB. mascarpone

3 egg whites

2 cups strong espresso

2 T. Cognac

28 ladyfingers or Ile de France champagne biscuits

1/2 cup unsweetened cocoa

Semisweet chocolate shavings

Instructions

In a large bowl beat egg yolks and sugar until thick and pale yellow. Fold in mascarpone thoroughly until completely smooth.

Beat egg whites until stiff and fold into above mixture.

Combine espresso and brandy. Dip ladyfingers quickly into mixture and line bottom of a 13X9 inch dish.

Spread half of the cheese mixture and sprinkle with half of the cocoa. Spread remaining ladyfingers and rest of cheese and sprinkle with rest of cocoa.

Cover with plastic and refrigerate overnight.

Cover with chocolate shavings before serving.
